„Gerupfter“

A pretzel with three blobs of Gerupfter.

The "Gerupfte" can be found in our region as a modified version of the Franconian model. This was originally a leftover dish in which overripe cheese was "plucked" and seasoned with spices and served as a spread. Instead of hard cheese or Camembert, cream cheese is used here, which is mixed with butter and garlic and served with bread.

The recipe

  • 125 g butter (room temperature)
  • 200 g cream cheese
  • 2 tablespoons quark
  • 2-3 garlic cloves
  • 1 onion, finely diced
  • Salt and pepper

Preparation

Mix all the ingredients together. Prepare the plucked meat 4-5 hours before serving so that it can infuse well. Stir again before serving. Serve with pretzels, sturdy bread or salted pretzels.
